Watched it last night. It's very good but holy shite are we ever going to stop talking about Katrina and injecting it into everything remotely dealing with the city?

Get used to it. Galveston is now forever associated with the hurricane that transformed the city in 1900.
Outside of the physical destruction and reconstruction, is there any doubt that Katrina caused a culture change? People had to choose to stay, leave, or return. It caused a major influx of Hispanic migration into the city. That obviously changes the food culture just like it has throughout the history of the city. Katrina happens to be the most relevant change to the city in our lifetime. So why would you expect it to be left out of conversation about the city’s evolution?
