I'll occasionally do a sauce. It's a little more more just mayo and ketchup though. But I don't use it often.

I also put other seasoning & lemon juice in mine.
Almost like a Cane's sauce.

Only time I see it is with my girlfriends family from down the bayou. It's not bad stuff. I like it more for the potatoes and other veggies, but every once in a while I'll dunk a tail in there.

I don't eat a sauce usually, but if there's one around, I might put a dab on a few tails. I pinch the tails into my mouth so it takes more time to dip and I don't go to the trouble.
I like a crawfish or shrimp remoulade salad and étouffée. A Louis sauce on crawfish, crab or shrimp is delicious on a salad plate with lettuce, avocado and hard boiled eggs. I like a good tartar sauce with fried fish and soft shell crab. A little dab'll do ya. I don't see much difference in that and dipping tails. Eat 'em the way you like 'em.

I like ketchup and tabasco sauce. I eat some when peeling and then pile some up for dipping.
