Well in the past hour my trip has been postponed indefinitely. But cafe graize sounds good from everything I've heard. I'll try it as soon as I make it down...

Is this place still open? I was there in August and it looked like it was empty, with a for lease sign out front.

Thanks for all of the feedback you all.
Looks like I will def. be hitting up Bistro Bijeaux and possibly Fish out of Water. After that one meal, I am looking for stuff with a nice setting and interesting food, but not really gourmet dining.
Not going to go to any fried seafood places. I get enough of that in N.O.
The only place I have eaten in Destin was Cuvee Beach and it was outstanding. It was however up for sale earlier in the summer. I hope they were purchased and maybe back in business with the same chefs.

their website has been redone, but the menu looks very similar. ernie was the old GM (from new orleans), and last time my mom went a couple months ago he was still there

OK, my first post here.
Here's one of Destin's best kept secret!!!
Dewey Destin is a real casual place where you eat ON the water. The city was named after their family. It is the closest place to eat from crab island. Can park your boat and dine. They are not in any dining guide that I have seen. The grouper parmesan, scallops, and crab dishes are wonderful. Everything served in those plastic baskets, which is ok by me. Must go early unless you don't mind waiting in line. Mostly locals.
Location: From Destin head towards the Destin Bridge (between Destin and Ft. Walton). Take a right at the last street before the bridge. Take a left at the little sign, down sorta an alley to the restaurant.
Hope this post isn't too late for you to enjoy this place.
