Deer sausage question

I am going to make a 25 pound batch of jalapeño cheese sausage. Does anyone have a good recipe? How many ounces of jalapeños and how many pounds of cheese?

My nephew workes at a deer processor. For 25lbs they used a 16oz jar of jalapenos. They used some high melt temp cheese that had to be special ordered.

Thanks. I have read about “high temp” cheese, but am going to use regular old cheddar and see how turns out. I have some fresh jalapeños from the garden. I can use a pound of those.

I would not use regular cheese. I’ve had this done before and it was a waste.

Just saw this. DO NOT use regular cheese. It will make a mess. There is a reason you use high temp cheese

This, seriously don't do it. Its not worth even trying. Literally all the cheese melts and goes all over the place and you are left with a messy sausage without cheese.

I'd also recommend making it in batches and mark what combo of jalepenos you like. For example, make 5 lbs with no japs, 10 lbs with light japs, and 10lbs with heavy japs. That way you don't have 25 lbs of shite you won't eat.
