Geaux Creole. Great flavor, nowhere the salt content like the rest. It is a bit more expensive than the popular brands but well worth it in my opinion. Everyone raves about the crawfish when I use their mix.

At what point in the boil do you put in the celery?

5 stalks doesn't seem like a lot for 2 sacks. Is 5 stalks more than it seems?

With the seasonings right when I put the water in and start the fire.

Keep in mind, a stalk is the whole celery, not just the individual ribs.

Ok thanks that's helpful. I was thinking individual ribs.

I'll try it.

What about celery seed?

I've heard of people using that.

100 qt pot, so the ratios would be different vs. an 80 qt.

1st sack: 1/2 bag (2 lbs) Louisiana mix, 1 bag Chackbay,8-10 bay leaves, 1 cup celery seed, 2 Zat bags, cup of cayenne, 6 large onions, 8-10 lemons, 2-3 oranges, dozen or so garlic pods, and 1 8oz bottle of liquid (during soak).

2nd sack I omit the Louisiana mix and cayenne. As I progress, I back off the Chackbay each subsequent sack, depending on what the water tastes like. I also add salt as needed.

I use celery seed. Sometimes celery salt depending on the boil seasoning I use. Quarter of one of those canisters. Save the rest for next boil

No one eats celery and it just takes up space. Celery seed is a more concentrated flavor. It’s subtle but it’s a pleasant flavor on the back end that your guests will like but won’t be able to put a finger on

Ok, thanks for the reply.

Now when you say "one of those canisters", do you mean like a 6 or 8oz jar you find in the spice section or something else?

Also, i would be using the celery seed, not the salt.
