Crawfish Etoufee for 40 people?

How many pounds of crawfish you figure I would need to feed about 40 people etoufee?

Any tips would be appreciated. I've cooked it before for around 8 people and turned out great.

I would say 12 lbs, which will give each diner a quarter lb. And 25 cups of rice. (Don't worry about having too much rice. Better to have too much than not enough.) I'd also make Mexican cornbread, and collard greens or green beans for sides.

You can do it by yourself. Take the recipe for 8 and multiply it by 5.. and chop the vegetables the night before.

I recently made some for 20 young men who all have good appetites. I used 12 lbs of crawfish and had just about 2 lbs leftover. I wasn’t taking my chances with those baws

Get ready for an expensive bill. Crawfish tails regularly running $15 or $16 a pound.

If you're doing this on an average home stove, cook it in four batches (one on each burner). If you have a high BTU stove and adequate pots, I'd still do it in two batches.

Or use a big pot outside over a propane burner.

Biggest problem ppl have with upscaled recipes is trying to cook too large a volume over insufficient heat.

Yea that's going to be the issue. I have two large pots I believe I will just do two batches.
