Love this show and always enjoy watching. Would love a chance to be on it, but man, he always seems to pull out a win.

I like the show. They act surprised when the challenger announces their signature dish.
How is it that they always have the ingredients already on hand when the challenger can choose anything to prepare.

His nemesis is Jambalaya, well actually rice in general. He mentioned it on Throwdown several years ago.

Because both challengers tell the show runners what their dishes will be and what ingredients they will need on hand should they win the first round

Anyone who can make an authentic asian dish will crush him.

He got crushed on a sushi challenge back when Throwdown with Bobby Flay was on; he had no idea how to roll it tight enough. He has no asian experience really

Right, such a tough concept.

I don't think Bobby knows ahead of time, but obviously producers do.

He did a jambalaya throwdown with the guy from Aurora Catering in New Orleans. He decided to put things like lobster, clams and other unusual ingredients in it.

Then, he committed the cardinal sin of lifting the lid to check on progress. The result was predictably, crunchy rice that could not be salvaged. Total humiliation for Bobby.

I think he also lost a throwdown to Poppy Tooker on gumbo.

So no one except the challengers and the show runners know what the signature dishes might be.
