They're all chickens. The rooster has sex with all of them.

Why not do some carrots, pearl onions a few nice mushrooms, a couple of cloves of garlic and red wine in a heavy Dutch oven. Lightly sear them after dredging in flour and then finish them covered in the oven for an hour or so. Use the liquid to make a sauce with a little cream.

Cornish hens cook faster than fryers, roasters etc... I'll be interested to know how they turn out cooked for that length of time.

I haven't made Opelousas chicken, but it's on my list. I don't know if it will work with cornish hens on the same time frame. My guess would be to check them because they're so tender as it is and so small. I'm anxious to find out how they turn out. I love cornish hens in spite of the fact that I'm not a chicken fan in general. I don't try them enough.

We enjoyed them.

They were a bit plain in some ways but that is one of the reasons I chose that recipe. I'd like to get better at well prepared simpler things rather than trying to be creative.

Creativity without good preparation is not good.

Chicken is pretty plain without heavy seasoning, sauce or smoke or a fried coating. That's why I don't eat it much. At least cornish hens are nice and tender.

I love dishes like this that can be made ahead and often get better when reheated.
