Corned Beef - ($.99/lb Brisket Sale at Target) In Search of Cure

I picked up a whole packer brisket at Target (Siegen Ln/BR) Friday night. I had no plans but at $.99/lb I couldn't pass it up. I'm going to turn a portion into corned beef I think. Anywhere aside from Cabela's to find pink salt aka "cure?" They claim it is sold out on their online inventory and I'd hate to waste a trip. Ideally in Ascension.

Oak grove smokehouse on Jefferson, but they are closed on Sunday

I buy pink curing salt at Red Stick Spice Co, but I don't think they're open on Sunday.

I tried Cabelas as I was in the area. That was a dismal failure. I can't see that location staying afloat for long. It was very dead in there, and at least in the cooking/camping section, it had about half the products I've seen in the past.

That said, quick zip up the interstate and slow creep down Siegen scored Pink salt at Academy. $1.34 in a little spice shaker. Corned beef is Corning now.

Hopefully it was pink Curing salt and not jus pink salt

Btw, rumor is Academy is coming to Gonzales, where the Kmart was

Yes. 6.25% sodium nitrate

I've heard the Academy rumor as well. I hope so for a few reasons. #1 hoping that doesn't turn into an empty blighted building.
