I knew waht you were saying...I agree, but the damn dish is just too good to "put on the shelf" until fresh corn is in.

I've only made it with fresh and even the fresh that's not that fresh in the grocery is okay for this in my experience.

We used to buy cobs to scrape and make it that way, but got "lazy" one time and used sweet frozen corn and could not tell the difference. With all that whipping cream, spices, butter and garlic I'm unsure how it would taste marginally better with fresh corn.

Maybe the corn I was buying at HEB was not fresh?

Gotta give big props to this recipe. It's solid and way better than the last recipe I've used.
