Cooks Illustrated was wrong about cooking a frozen steak

Tried to defrost a steak to cook in time for lunch since I’m home today. When I was ready to cook at 12, it was still frozen in the very center. Found this article about cooking steaks straight out of the freezer and decided to give it a try. Figured mine wouldn’t take long to cook.

Their method is:

Sear 90 seconds each side until browned
Oven at 275 until brought up to 125 in about 20 minutes.

My steak wasn’t even fully frozen but I seared two minutes each side on a cast iron skillet and it took 45 minutes to get to 125 at 275 in the oven.

I honestly like mine a little more done than that, so lesson learned. Frozen steaks can’t be cooked to perfection in 25(ish) minutes.

Oh hell yeah. It was great. Just took way longer than the <25 minutes Cooks estimated.

Just intuitively, I would think a FULLY FROZEN piece of meat is going to take longer than that to reach that temperature at that temperature oven.

Here's a reverse sear frozen steak recipe that says 45 minutes at 250 before taking out and searing.

I'd probably choose that method because I think it would be difficult to get a decent sear on a frozen steak. Looks like the same time as you took, though.

Cooks Illustrated fired the guy who built the business. I wouldn't trust a thing they say these days. No Christopher Kimball, no go.

Every recipe ever written is full of shite on cook times. They want to make stuff look quick snd simple, but it always takes longer in reality.

A steak cooked from 30 degrees frozen will take a lot less time to cook one that’s -10 degrees.
