cooking with duck question

i want to make a duck, smoked turkey, and sausage gumbo for super bowl. The smoked turkey breasts will be coming from couyons in Port Allen. It was pretty damn tasty last time I had it.
I have never cooked with duck though. I was thinking about ordering some farm raised duck meat from a website.
Should I order a whole duck and roast it in the oven or could a couple of breasts work?
I have never messed with duck so its extremely new meat to me.
for any tips\suggestions yall might have

honestly, find a friend who has wild ducks in the freezer. those are gumbo ducks
a domestic duck will have so much fat it will be hard to keep your gumbo from being greasy without a lot of extra steps. also, if you dont make a stock with the duck carcasses the duck meat will hardly make an impact flavor-wise on your gumbo. you'd be better off using chicken dark meat
a good dark rich duck gumbo is the shite though. using wild ducks and making a good stock is the key

I don’t know anything about tame duck but I make gumbo with wild ducks often. My method, assuming I have time, is to smoke the duck(s) for about an hour, debone, roast the carcass on a bed of onions for a little bit then make the stock. Dark roux, good sausage and slip some oysters in at the end. Lawd.

I bought a frozen duck from rouses and used duck fat I bought on amazon for the roux. I used the leg quarters for meat. Used chicken stock. Came out pretty good.

That’s actually what I was thinking of doing. I could smoke the duck to.

You can get farm raised duck at Calandro’s, Alexander’s, and I think rouses. No need to order online.

I do a smoked duck gumbo every year. Takes about 2 hours for a farm duck. Wild ducks are smaller, they are done in about an hour. I also keep a drip pan underneath to catch the rendered fat and use that for the roux.

I’m sure a big fat farm raised duck will take longer. Dealing with a wild duck an hour at about 225 will render some fat, get the meat medium rareish and get some smoke in the bones. Dealing with wild vs farm raised is really two different animals though I would imagine.

Wild ducks are obviously more gamey. Farm ducks are closer to chickens, but their breasts are richer. You could definitely pick out the wild duck in my gumbo.

I didn’t smoke it. I fried it in the duck fat and reserved the fat for roux.
