I think it would ship fine, but what makes jambalaya great is that it feeds the masses cheaply. Cost + shipping =/= cheap.
I would go buy a cast iron before I paid to ship jambalaya. Use it 2 or 3 more times and it pays off.

To do one batch? At least a 10 gallon (40qt)

I would buy smaller and do multiple batches so u could use the pot more often

My thoughts exactly...

although I think a pastalaya may be possible in an aluminum pot.

Play around with the Jambalaya Calculator - it will give you a feel for what you need. A 10 gallon pot will give 80 smallish servings (between 1.5 and 2 cups each). You can make up for it with sides.
