I'm looking for some ideas for cooking gadgets for Christmas gifts. What are some things you have bought that you don't like to cook without?

I like my flat tip spoon (roux spoon)
A good white whisk, not that plastic coated BS.
A nice big spatula for flipping fish and using on my blackstone
I like my Immersion Blender
A Sous Vide Machine is under $75 and you get nice results

Why would you sous vide stuff for 24 hours?

Lock and release tongs. One-hand operation. You can lock/unlock just by turning upright. You don’t even have to put your beer down. I bought some for myself and some other amateur chefs on my list.

A solid second on the immersion blender. I use it a few times a month when making cream soups. Beats taking the soup out of the pot and putting it into a blender or food processor and dirtying another big appliance.

A good non-stick coated pan for eggs and omelets that you can flip without a spatula.

Sharpening stone with 2 sides, one finer than the other for keeping knives sharp.

Heat diffusers to go under your big pots when cooking things like beans, stews, gumbos. They sit atop the grate and spread out the heat across the bottom of the cooking vessel more evenly to not create concentrated hot spots and prevent scorching. Can be found at Bed, Bath & Beyond.

Ove Gloves
Been having a pair for years.
Non slip.
So easy to grab a pot or pan out of the oven, poor pots of pasta etc etc.
Washable. Only downside, they have to be dry to use otherwise they will get hot fast.

For meat I use my Thermapen a lot. I don't have to guess on internal temp anymore when grilling.

Thermopop is also a good little thermometer.

Crisbee --- This brand has made it easy for me to keep my cast iron in good shape if you like to cook with CI.

Thermapens are the awesome and we use it almost every day. Silicone spatulas are really nice and easy to clean. LINK
