Cooking Backbone Stew this afternoon

It's almost impossible to find pork backbone. Best stop usually has it for around $6 a pound They were out along with Kirks's (You need a butcher) that slaughter house in Carencro and every other butcher in lafayette. Found a little place called Guidroz meat market $3.29 lb. Pigs feet are on sale for 97 cents a lb at Super one.

Gonna use the Acadiana Table recipe. Will send pictures later

You take the pigs feet out before you serve it. It makes the gravy texture and flavor so much better.

Don't know if they still do it, but T-boys in Mamou used to sell backbone with the loins still attached. I think they called it cajun cut.

Love me some turkey neck stew as an alternative. Turkey necks can be had for $.99 a lb. at Rouses several times a year and are available every day.

if you google Anthony Bourdain boucherie, hes in patterson; they have a guy cooking it slow in a 10 gallon....AB is like an old dog salivating watching that pot throughout the day

Drive to Evangeline Parish, they have it at every meat market. To me, that is the BEST fricasse, throw some potatoes or turnips & carrots in there...ok, now I need this!

If you’ve got beef bone broth, go with that but if the backbone chops are cut right, they’ll be enough fatty flavor to make a great stock in itself.
