Cooking an oven cooked jambalaya, any tips or recommendations?

Look at the Prudhomme recipe in La Kitchen, if you have it. But cut the red pepper in half.

Don't have that but googled and found one, missing a few things to make it his way it seems.

Screw the poultry magic. Season to taste with salt , black and red pepper. Drop in a bay leaf or two, plus a t of thyme and basil for each 4 cups of liquid you use.

It's hard to get the rice cooked properly on an electric stove so I end up popping the Dutch oven in a 350 degree oven for 15-20 mins usually. I put a piece of foil over the pot, then the lid to make sure it steams real well.

No pictures but last night was a success.... Had some pieces of rice that were kinda hard but overall it came with a nice texture. I did mix andouille chicken sausage and andouille pork sausage to give some flavor.
