I always smoke out my kitchen. I have at least 3 fans going on high when I open the oven

Follow this video and you'll do well.

Cast iron is the proper way to sear a steak. I always do mine inside.

Posted this the other night; made on the baking steel. About 45 minutes to heat the steel. About 90-120 seconds on each side.

That looks heavenly. Is baking steel just a flat top you set on top of your grill?

Basically a 1/4" stainless plate. It will get to over 700° in a oven that has 525 as its highest temp setting.

I can see that. Hard to get some steaks to char in an oven, didnt add butter or oil to the steel, just slapped them on there.

I think I didn't have the oven all the way up on my first try so I might do that as well.
