Commercial 4 Inch (deep) food service pans over direct heat/flame?

Is there a version of these where you can cook over direct heat directly in the pan? Cook in the pan, then move it over to the drop-in warming/serving/prep table? I've found "oven safe" ones, but not direct flame ones. Do they exist?

These are fine in the oven for doing something like a braise or lasagna, but they don't distribute heat well and will scorch if put over a flame.

Yep. Way too thin. Hell, they will scorch food over a can of Sterno if you have it too close and don't stir occasionally.
The only way it could possibly work would be over a very thick steel plate heat diffuser, but really, what's the benefit for cooking in a sheet pan over open flame?
