It’s one thing to be able to create a menu. It’s another thing to be able to hire a staff and properly and consistently execute that menu. Funny, most of the places listed share something in common.

Going by his reputation, I don't think he would make changes based on customer feedback necessarily, but he is skilled enough that he personally doesn't seem like he'd want lackluster or cold food being served.
If he’s a top chef and is tolerating that, then he’s burned out and isn’t on top of his game.
Any top chef would at least be turning out hot food.

I don't think he runs the kitchen. I think he just designed the menu as a consultant.
That's what he does now because his reputation in the industry prevents him from getting a kitchen to run.
He's a dick who nobody wants to work for.
And the constant allegations of sexual harassment. I don't know if those are true, but there's a lot of them out there
He's not in charge at Colonel's Club and never has been.

Yeah, all I've ever heard is that he's extremely hard to work for and a major fricking a-hole. That dude can whip up some awesome dishes though.

Yeah, he's not the chef as far as I've ever known. Although, I guess I figured part of the consulting gig would be ensuring the actual people in the kitchen execute properly. But I guess once you're out of the picture, that's on management.
Sadly, I've heard many of the same accusations you describe.. as well as some hilariously bad other stunts.
I guess it is pretty smart of him to have gone the short term consulting route where he's finished the job before any trouble begins.

Had a similar situation a couple weeks ago. Service was awful and food was meh. Waited about 20min just for water. Drinks and food took forever and we rarely saw our waitress. I think we were there for 3.5 hrs total and not because we were drinking and having a good time; mostly just waiting. The drinks were the star of the show but unfortunately b/c of the bad service we weren't able to try as many as we would have liked.
May give it another chance but not anytime soon.
