This is Ruffino's recipe which we've made pretty often. It's good and the sauce is good.

I've used various sauces.Sometimes, hurricane sauce. Sometime's Cousin's creole tomato dressing...just whatever you like.
Lately, I've been using Alton Brown's recipe for corn dogs, but I use shrimp. I've used hot dogs and sausage as well. It says you must use the mixture right after you make it, but I've used it and then refrigerated overnight and used it again. Worked just fine. I find his corn dogs to be crunchier than Ruffino's. Think I'm making these again tonight.

Red Stick Spice sells awesome extra virgin olive oils with various infusions, like jalapeño, peach, etc.
