This came out awesome. Brined for 5 days,. First on the grill was at IT 140. The stall was 3 1/2 hours but that does not surprise me. Pulled at IT 165 and wrapped in pink and then final pull at 205. Very pleased

thanks, mostly 250 until 3 hours into the stall and I bumped to 270

good! I mostly wanted to try this on what people call "the pour mans brisket", even though it's a more expensive piece of meat normally.

I smoke chuck roast quite a bit so I knew what to expect. It's got a much higher fat content so that melt. stall, can take forever but it's worth it.

This was a good as any deli i have tried.

Is that a wireless thermo? If so, what brand is it? And do you have a grill grate wireless?

I’m tired of dealing with the wires on my maverick thermo.

This is a Rectec 590 pellet grill which has wireless and wifi but I am using a meater prob. The original is now cheaper than the new one and worth it.

Wow. How have I never seen this? I’ve been fricking with my maverick and replacing the meat/grill probe randomly the past 5+ years. I actually got to a point where I hated using it because of the wires and cleaning them etc.

Going to order one of these this week.
