That sucks. That's why having a jar of roux on in the pantry is a good idea. Maybe there's a store open where you can go pick one up real quick?

This kinda happened to me yesterday. I scooped off big globs of roux on top and then whisked like hell to try to get it take. It worked out okay.

Then let it reduce for an hour.

This....rolling boil. Then reduce for 1 hr plus.
