When it’s made in Texas?

This is a Metry chili. Next big trend in the chili world.

Some would say chili peppers and chunks of meat. Often referred to as a bowl of red.

OP's chili looks legit minus the chocolate. That was random.

Beans in chili FTW

it is really good
hats off to geauxldmember for the recipe

I took a few liberties but the technique is right on. Take the time to carmelize the meats and the flavor explodes

Did you make your own chili powder using his list? If so was it easy? Blends right up in blender? I want to try this next cool day.

yes, super easy
go to the Latin market and get a variety of dried peppers. The big ones are spicy and fruity and the little ones are hot. Get 3-4 different kinds. While you are there get a jar of whole cumin seeds and a bag of Mexican oregano

cut the peppers into pieces with scissors into a metal mixing bowl. You can ditch some of the seeds if you want. Then dump in the cumin seeds. Put the bowl in a hot oven until you hear the seeds pop.

dump the contents of the bowl into the food processor, add the dried oregano and paprika and process into a powder. Put the leftover in a sealed container and it will stay usable for a month or two
