Last 2 pots I've grilled the chili ground beef off to the side of the charcoal and mesquite (low heat) for an hour before adding to the chili.

This. Smoke the meat. Assemble chili then cook in smoker. More often you stir, the more smoke gets incorporated. Smoked chili is fantastic

Try mixing in a spoon of creamy peanut butter. Gives it a familiar taste that people cannot pinpoint until you tell them. Just make sure no one has peanut allergies.
