Chicken Wing Flapper (Halved?)

Went to Soji last night in BR and got an order of the schezwan chicken wings. They were great. Perfectly crispy fried tossed in a sweet and spicy schezwan sauce...
I thought it was strange when they brought them out and they were all flappers. Ok whatever, it's Asian chicken wings they're trying to be different... I take a bite and there's only one bone in it. Ok, maybe it fell out I think to myself. Grab the next one, one bone again. I then realize that they're halved, I think. I tried Googling this technique and found nothing. Has anyone ever seen a flapper halved?

Sure they didn't just cut remove one bone to make them easier to eat??

I thought that too. Could have been. Either way I've never seen the flapper with one bone. Makes sense only having one bone so you don't have to snap it, pry out, or waste that middle piece of chicken.

I messaged them on IG because I'm a fat arse that loves chicken wings... They're cut in half and the chef learned the technique in Thailand. Which must be true because I can't find shite on the web about it...
