I happen to see one by Emeril which looks good for you chicken/smothered food lovers.

It's been a while since I've made Paul Prudhomme's version which is quite good, probably because it's fried chicken based and you know how I love his fried chicken gumbo. I highly recommend it.

Below is his original recipe. There's one on his website with the Magic Seasoning, probably, but I prefer to make the seasoning mixture myself. I don't think the Magic line tastes the same.

If we're talking Paul Prudhomme and chicken, I'm a mark for his Chicken Big Mamou over the etouffee.

I only took a couple pictures, but it turned out pretty good. Excuse the paper bowl, I was the only one eating and I hate washing dishes.

Looks good.

I'm not a chicken lover, but I really enjoyed PP's version.

ETA: I don't care if you eat from a disposable bowl! I ate an Italian sausage sandwich on one last night, myself.

I bet the dish tastes better tomorrow, too.

Made emerils version. Thanks for posting the recipe, it was pretty simple and ended up really good.

Glad you tried it. I liked the beer element in it. I'm going to have to try it myself now that you've given it a stamp of approval.
