Chicken Enchiladas with Mole

Made this on Saturday and really enjoyed it. I had a little trouble finding a good authentic mole recipe, so I sort of combined a couple recipes and tweaked the flavor as the mole simmered. Topped with crumbled queso fresco and fresh cilantro.

Chicken Enchiladas with Mole
I followed the enchilada recipe verbatim because I was able to find all of the ingredients.
I couldn't locate the dried guajillo y ancho chiles at the store and didn't feel like driving across town to the Mexican grocer, so I bought canned chipotle peppers in adobo sauce, instead, to get a similar color. I also added chili powder for the smokiness and bitterness that I lacked from the dried chiles. Also added some cocoa powder to add to the color and bitterness to balance out the sugar.
Some of the other mole recipes I looked at called for dried thyme and coriander, so I threw some of that in.

Most dried peppers will work if you can't find the exact kind the recipe calls for. Just check the spice level and make sure you get the level of spice that you like.
I can usually find a variety of dried peppers near all the dry spices:
If they have them in the produce area, get those instead.
