I need an easy chicken casserole recipe using chicken breast..

Look up "King Ranch Chicken Casserole" and enjoy. It is an easy dish to fix and tastes great too, especially if you like "Tex/Mex" type foods.
ETA: The good thing about this recipe, besides how good it tastes, is that if you make a big casserole, it freezes well and the leftovers can be eaten at some later date.

King Ranch chicken is one of my favorite casseroles of all-time.

King Ranch or Chicken Poppy Seed are both pretty easy and good.
