yeah, he calls for finishing it in the oven. i wouldn't say his dumplings are crisp; it is basically a drop biscuit recipe; you finish in the oven to bake the biscuits that are floating on the top of the chicken stew.

it is definitely not your traditional C&D.

Catman, that's what we always called chicken and dumplings growing up in waaayy south LA. It wasn't until I was 25 and had moved "nawth" to Baton Rouge that I learned what real country chicken and dumplings were supposed to be. FWIW, I prefer the old Cajun style with the drop biscuits!

I agree, I was not impressed with the C & D.

in fact not much has impressed me at couchon other than the fried rabbit liver.


I hate to say it but I think the place is overrated.

I agree...and to top it off, they don't even serve rice. And the "seasoned" rice or pilaf doesn't count.

their lima beans are money. The oyster sandwich is also really good. It's overpriced for what you get, but i like it....easy place to bring an out of towner.

i actually love the place. i've only been twice but both times the meals were fantastic. great atmosphere, great service, and really good food.

i've enjoyed Donald Link's cookbook quite a bit as well.

Best I ever had was from the old Brunswick Cafe and poolhall that was downtown (guess that gives my old age away). I understand some of the cooks ended up at PoorBoy LLoyds and you can get the Chicken and dumplings there on Thursdays only. The gravy is thick, loaded with chicken and is falling off the plate. Tastes exactly as it did many years ago and is now just around the corner from the original. Best to go before noon as they often run out of them.

Cracker Barrel has the best imitation available up in DC, and it's pretty fair. The problem is that nobody else tries.
