That is a nice looking knife. It looks like a hexagonal or octagonal handle and I'm not sure I'd like that feel, but the blade looks good.

I wondered about it but it's very comfortable in my hand. I was also worried about the blue carbon steel but after research I found out that it's easy to care for.

I received these five years ago as a gift. When you cook for a living, this is what family members buy you.


I was a little unsure when I received them but, i use them exclusively & just run them through a sharpener occasionally. I like them because 1) they work 2) low maintenance & 3) I can abuse them without remorse.

For $20 you can't beat it.

The best suggestion you're going to get is to go to a place that lets you try out knives and find one that is the right size and fit for you and your hand. Even with your narrowed down wish list, there are a lot of different knives out there.

There's no replacing actually handling knives to find one you like and it's a lot cheaper than spending $100 a pop until you find one you like or, worse, using one you don't like and maybe injuring yourself because you spent $100 on a knife and you're going to use it, by god.

Also, once you actually handle some Japanese style single beveled knives, you might find you really don't like them much. They drive differently than the (typically) heavier spined Western style double beveled knives. I love the things. Some people don't.

I have a 8" Dalstrong Shogun Series Chef knife, that I'm very happy with.
