Chef’s Knife Suggestions

Looking to find a knife that has got quality steel and can last a long time. I don’t mind if it takes a ton of upkeep, I am prepared to do that and actually look forward to it. I’m new to the whole super quality knives scene so hoping y’all can help me out.

Looking for:
Japanese style handle
~8 inches long
Between $100-$200

Everything else I’m not set on a particular characteristic.

Go to williams sonoma or a cutlery store and handle them all. See what you like. Then go online and find cheapest price.

If looking for a really good utilitarian chef's knife that will not break the bank, then look no further than a Dexter.

You can pay hundreds of dollars for one of those Japanese knives or other high end "Name Brand" knife, but my Dexter slices, dices, juliennes, cuts, just fine, is easy to sharpen when needed and holds a good edge once sharp.

I've had mine for about 10 years with no complaints.

Wife bought me the whole set of Chroma knives last year. Freaking great knives. This is one $150ish. It's my favorite. She bought it separate from the complete set.

I agree, Dexter makes some good stuff. I have 4 of their white handle(boning, scalloped, fillet, and the Tiger Edge slicer) but sometimes you want something that looks good.

Good looking knives don't make you work better or cook better, but some folks just need pretty things I guess.

I agree. I have some old german long blade knives that I use all the time. Ugly and used but super sharp and holds their edges.

You are right but it is a lot more fun doing anything when you have good equipment. If you allow these premium knives to dull, then you may as well have bought them at Walmart. But when they are sharp, they are downright fun to use.

I love my Shun.

This is the one I have, but I got it on sale for $115ish LINK.

I've also picked one of these up and use it just as much, and it is 1/5th the price of the Shun LINK.

My dad gave me an eight inch Dexter Chef knife at least 20 years ago. Use it every day.
Bought myself a Dexter boning knife 10 years are so ago.
Have had and have tried more expensive knives that were perfectly fine but I go back to the Dexter.

I personally do not like the shiny chrome look. The blade looks cool and I’m sure it is high quality but the handle just looks like my hand would slide right off of it.

I still have a few Old Hickory knives and at least one cleaver that served me well for many years. Just had to make sure to dry them after washing or they could start rusting. But, boy did they sharpen nice and cut real good, especially the cleaver for such a heavy bladed implement.

That metal handle does not look ergonomic and would be slippery when wet.

BFT's: I have had excellent experiences dealing with the Knife Merchant: LINK

I bought some F. Dick German pattern knives from them. They're the ones you see in the "Salt Bae" videos on YouTube.
I also bought a Masahiro sushi knife. Apparently it is common for Japanese knives to come half sharpened, with the expectation that the chef is a master sharpener who will finish the edge to his preference. The Knife Merchant will finish your Japanese knives for free.
From the factory, Masahiro's are sharpened to ~1500 grit. TKM sharpened my knife to 4,000, the polished it on a 6000 grit stone. It is basically a razor blade with a bamboo handle.
