The Dexter Russell knives cut everything in extremely nice restaurants. They use and throw away . I want a Kramer knife for myself personally. I have a set of Hinkle pro that I rarely take to the restaurant. My days of cutting up a bunch of onions are behind me. There are knife companies that sharpen their own knives they rent to restaurants. They grind the shite out of them though. Get a decent sharpener and learn to use a steel for whatever you have at home.

I have several, but this is the one I use the most. It's Japanese. Great knife. $175.

Got the global chef's knife earlier this year and have loved it. It's one Bourdain mentioned in his Kitchen Confidential book.

whetstones of varying grit. i have 4 ranging from 400 grit to 8000 grit. i also have a 4 stage stropping method after that.
honestly its my number one recommendation to anyone wanting good knives. i have several good German steel knives and some Japanese knives. Since im anal about keeping them well kept they stay in their cases most of the time. most daily cooking i just reach for my cheap block set knives. but with the stones they are just as sharp as. Razor sharp.
I find it very relaxing the sharpen them too. Bonus you can sharpen other stuff.

I also have the global and while it has a nice blade I find that the handle is too small for me and my hand begins to cramp when I use it.
