Weren't you about to do a non-BBQ pop up at Bevi before the CCBBQ opportunity came along?

Rob now that the NOLA/US king of bbq is out of Hogs, who's your unbiased favorite to win it this year?

Here's a big question, soak or sprinkle crawfish?

He was never going to be a part of Hogs.

Wasn't invited.

Aporkalypse Now is going to three-peat. And no offense to Rob, but they were always the odds on favorite.

Competitive BBQ is different than commercial. Aporkalypse Now guys compete year round and are very good.

I specifically heard him on the call the other night as he called in a couple minutes late when Renee went into his speech.

Backer also mentioned he was cooking this year before all this. What did you hear?

With 90+ teams, even minus Rob, there has to be other teams that know how to bbq at a competitive level.

Those guys cook in like 30 competitions per year. They are legit as hell and teach competitive BBQ.

Wanted to take some classes from them to see their process, but they only offer them in virginia or Maryland.

What can I say? I'm one of Arse's boys and I like smoked meat.

I really enjoyed the CCBBQ product early on. That brisket chili was awesome. Just had a hard time getting over there to eat it. I usually fast thru lunch and eat a big dinner. Blue Oak was always there for me.

I really do need to make it Belle Chasse and try LA23 though.

Chef Rob, what are a couple of tips you could give to smokers that are still learning the basics.

Is it one guy or a team of cooks competing 30 times a year?
