Haven't tried this recipe, but with a duck gumbo I'll always throw okra and red wine into the roux right at the very end. I find it typically gets a little bit darker when I do that. No idea why and if there's no okra in that gumbo then forget what I said .

Hard for me to understand how someone could mistake gumbo for salad, even with tomatoes and okra. Were you special ed?

Nope, tomatoes belong in a salad not a gumbo. Flour based roux is how gumbo is made. Keep your creole shite.

I used to cook at a facility that produced food for restaurants. That list included Walk-ons, so we made their duck and andouille gumbo. The dark color is attributed to powdered caramel color, kitchen bouquet, and a hefty amount of worcestershire.

I've had their gumbo and it taste like piss compared to Charlie G's. No way pops used that KB
