Tonight is my first time firing up my pellet, and it’s taken 20 minutes to get to 88* & won’t climb from there. Off to a roaring start

The learning curve was part of the fun for me in regards to my BGE. I’ve had it for close to a year now and only have screwed up a couple of cooks.
It’s fun to fire it up and hone in temp. Good reason to drink a bourbon or a few beers and hang out outside as well.
Versatility definitely goes to ceramic, like you said. There are so many accessories and you can fall down the rabbit hole pretty quick.
Firing it up and getting up to temp did take like 40 minutes or so when I was starting, but now I can pretty much get the thing up wherever I need it in 20-25 min. Still a bit of a wait, but it’s a process I enjoy.

This is what you get with a ceramic, but don’t expect stick level when you get good at a stick. Ceramics do it all, but they do it at a level lower. They are good, just not great.
Pellet is lazy Q, but a good one will perform just as well as a ceramic for Q, but you will spend some money to get there. I would go another option if what you want it for is steak though.

When I used one, I put the charcoal in, lit it up with a wax cube, when the fire was sufficient put my deflector on, grill on top and closed it and use the top and bottom vents to regular until desired temp.
Then, as an example, put my butt on with my Bluetooth thermometer, closed the lid and left it alone until desired IT, usually 205.
what do you do, keep opening the lid and baby sitting it?
In fact, pellet grills a little more maintenance it appears to be better to wrap at IT 165.
Also, how does a $1000 pellet grill perform better than a $499 pellet grill?

They burn a lot less pellets because they hold heat better.

My GMG was leaking smoke from a number of places yesterday. I'm going to see if I can install a gasket to prevent a lot of that.

As said less pellets, they are built to last longer and you get rock steady temp control.
The main one being temp control, the $499 model will have a low to high rheostat, the $1000 model will most likely have a atual PDI themostat controller.

Not to hijack the thread, but I have a Weber Performer, and I love the versatility of it. I have a Slow N Sear and a DigiQ. I can throw a butt on and leave it alone because of the DigiQ. The slow and sear makes it super easy to set up a long slow cook (no snake to set up) and the DigiQ controls the temp. The Slow N Sear also makes it easy to sear a steak at 700-800 degrees.
Yes, it probably uses more fuel than a Green Egg, but it is more mobile and easier to bring the temps down. I can also cook on two zones simultaneously. All told, I have about $750 invested in the set up and it's all I need.
Brisket (halfway done with smoke at 250).
Chicken thighs (indirect 350).
Steak (seared at unknown temperature)
