Cassandra's Louisiana Kitchen; Shreveport soul food

We made our first visit to Cassandra’s Louisiana Kitchen (9001 Jewella Avenue, Shreveport) and discovered some darned good food. It's in the old Pacific Pearl building near the former South Park Mall. Opened a few months ago.

$9 weekday lunch specials come with tea and cornbread. We had baked chicken with cornbread dressing, collards, and blackeyed peas. They were out of sweet potato pie, so we settled for peach cobbler with vanilla ice cream on top.

Everything was very good and well seasoned. The restaurant was clean and neat, even after a busy lunch rush. Everything coming out of the kitchen looked really good, and I can't wait to go try some other items. The fried chicken and crawfish cornbread supreme are high on that list.

Cassandra herself was sitting by us having lunch with a friend. She and the waitstaff could not have been more friendly. Give this place a try if you want some good soul food.

Looks great!

I can't help but wonder how they make their "famous Roux.)

More and more people, including some who have posted here, refer to the entire liquid component of gumbo as roux.

It bugs me, like when people call the vulva a vagina. The vagina is just the hole. But I know what they mean.
