Can I use cannellini beans for making white beans? I typically use navy or great northern, but I have a pound of dried cannellini beans at the house and want to make a pot of white beans. I've never used cannellini before, but I don't see why they wouldn't work. Thoughts?

ETA: Beans turned out great. No issues with using cannellini. I'd post of pic, but I don't know how to do that.

Cook em. Season well. More or less a white kidney. Enjoy!

They will work just fine, but you may have to cook them a little longer...they tend to stay whole for longer than the smaller navy beans. I prefer the texture of cannelini.

The reality is that even though the different varieties have slightly different flavors and sizes, (and everyone has their personal favorites), they’re often used interchangeably in recipes.
