Can you roll out/smash turkey breasts like chicken?

Thinking of trying chicken Parmesan using a flattened turkey breast.

I imagine you could. Butterball sells packs of turkey breast cutlets. They're about half an inch thick.

I think that's what I've got home thawed. I want to roll them out to 1/4 bread then and serve with an Alfredo

You can but keep in mind they aren't anywhere near as dense as a chicken breast. They won't hold up to as much flattening as chicken. They will tear apart easily.

They rolled out well. Frying them up now. Will report back on taste, going with a tomato/Alfredo

The rolled out turkey breasts were great. No one even noticed they weren't chicken. I wouldn't have been able to tell if I hadn't known.
