Can you get fresh Turtle meat in Baton Rouge?

Thinking about trying to cook some while the wife is out of town. I pretty sure Tony's has some frozen. Might just switch to gator unless frozen turtle meat is fairly good.

Second question, any advice on best way to prepare it?

When I say fresh I mean not frozen

It freezes well, got some frozen from Tony’s ($$$$) and make a sauce picante

Here’s how I cook mine.



Turtle meat
Season all (I like T Boys or Slap ya Mama)
1tbs Worcestershire sauce
Guidry’s Fresh cuts (chopped (onions, parsley, bell peppers) OR

1 onion, chopped
1 bell pepper, chopped
1/2 cup green onion tops
1/2 cup parsley
2-3 cloves of garlic, chopped

1 can (10 oz) diced tomatoes and green chilies (hot)
1 can (8 oz) tomato sauce
2 Tbs roux


Season each piece of turtle meat and brown in light grease over medium- medium high heat. Stir often and brown long. This will make the gravy. When meat is browned, add onions, rotel diced tomatoes, garlic, 1/2 the green onions and parsley, lower heat and sauté.

Next, add tomato sauce, 2 tbs roux, and tbs of Worcestershire and water.
Raise heat til rolling boil then lower to where it just boils, add the rest of the green onions and parsley, cover until tender.

Depending on how much gravy you need, you can add gravy flour to thicken.

Also, I catch mine so I clean them myself. I scald them and skin the meat (allows me to brown meat better and not skin) but keep the skin and brown it also. Skin is very tasty when cooked down.

Finding it fresh never frozen will be very difficult. But no reason not to use frozen if it is handled properly. I wouldn't hesitate to purchase frozen turtle meat from a retailer.

No doubt. I’ve frozen some in water for 2 years, cooked it and was good as I’d ever eaten.

Plantation Cookbook Turtle Soup

Stock:

2 lbs turtle meat
1 gallon water
2 bay leaves
2 ribs celery, coarsely chopped
3 onions, quartered
2 carrots, coarsely chopped
4 sprigs parsley
6 cloves
½ tsp thyme
1 clove garlic

Soup:

3/4 cup flour
1/2 cup butter or shortening
1 can tomatoes (16 ounces) seeded and pureed
6 Tbs tomato sauce
1/2 cup finely chopped green onions
1/3 cup ground or finely chopped ham
1 cup sherry
3 Tbs lemon juice
1/8 tsp cayenne pepper
1/2 tsp cinnamon
1/2 tsp nutmeg
Salt
Pepper
4 hard-boiled eggs (chopped)
8 lemon slices
3/4 Tbs chopped parsley
Extra sherry

Directions

Stock:

Boil turtle meat uncovered for approximately 2 hours in water seasoned with bay leaves, celery, onions, carrots, parsley, cloves, thyme, and garlic. Cook until meat is tender. Strain. If necessary add chicken or beef bouillon to make 3 quarts. Mince turtle meat and return to stock. This stock may be cooked the day before preparing soup.

Soup:

In a soup kettle, make a medium brown roux of flour and melted butter or shortening. Add tomatoes, tomato sauce, and green onions. Simmer on low flame for 5 minutes, being careful not to let onions brown. Add ham, minced turtle meat, stock and sherry. Simmer slowly, uncovered, for 2 hours. Add lemon juice, cayenne, cinnamon, nutmeg, salt and pepper. Cook 5 minutes longer. Correct seasoning.

To serve, add 2 tablespoons sherry to each bowl and garnish with chopped eggs, lemon slices, and a pinch of parsley.
