Bought from Jerry Lee’s Christmas Eve. Leaving for Florida tomorrow morning. Can I freeze the leftover slices for when we return home?

If so, can I freeze the leftover boudin too?

I've tried freezing Hogshead cheese and it did not go well. It retains too much water when freezing, such that it is a little mushy when it defrosts and the taste is watered down. But may as well give it a shot.

Not sure about head cheese, but boudin freezes and keeps just fine

actually you can heat the head cheese up and melt it into a soup like consistency and then pour it into a mold which will freeze better than slices
