Every short order cook I've ever known can crack an egg open with one hand. I would hardly rate any of them kitchen masters.

put half of the egg between your thumb and index, the other half between middle finger and your palm. Crack the egg on the counter and then pull the thumb and index finger away from the palm. At least that's how I do it. It wasn't very hard for me to learn, but I do eat a ton of eggs.

I can, but I usually put the egg into a pyrex glass cup first in case of shells and then put it in the pan. I don't think it's a sign of anything.

i do it because i'm usually holding a baby in the mornings with my other arm

for some reason i ruin every egg that i attempt to crack on the counter or bottom of the pan.

cracking it against the side of a glass bowl or skillet (not the edge, the flat) works every time for me.

i'm guessing it has to do with the amount of force i'm using is too much for a solid surface to absorb but not so much the side of a glass mixing bowl.

trying to split it on the edge of the pan or bowl leads to a mess so i gave up on that as well.

In 1971 I was stationed at Womack Army Hospital at Ft Bragg, NC - worked in surgery as an OR tech. We were pretty much the first guys in the breakfast line each day (maybe 5:30am) to eat, since we had already been in surgery a while setting up our rooms for the day and then would not eat again until after how ever many morning cases would be scheduled for that day in our room. The cooks in the cafeteria there would crack hundreds of eggs each morning. They would pick them up and single hand crack them two at a time. One in the left hand and one in the right hand - at the same time.

Funny what you remember after 40 something years.

Maybe the ability to do it is nothing more than the sign of a good egg cracker.

It's really not that hard. I taught myself in a few tries. Push with thumb on one side, pull with your two fingers on the other side to split the shell.

I have never been able to. I get a good crack but I can't pull the egg apart using only the fingers of one hand. Maybe my hand is too small? I don't try very often because I end up making a mess.

An experienced cook, yes.


I can do it. Probably because I used to cook breakfast for 100+ people by myself once a week back in the day.
