I’m shopping for crawfish tail meat tomorrow and might do just that! I’ll start it and she or he can finish it.

I’ve never made grillades, so I don’t think I’ll try it for someone else, but it’s a good idea, Thanks. Someone else suggested grillades, as well.

Cooked crawfish etoufee. Freezes very well. Crawfish added. Do it all the time to send with my girls.

Not sure where you are, but a place like Nunu's in Lafayette would have a lot of stuff you can freeze and send. Jalepeno chicken burgers, boudin, steens syrup sausage, stuffed chickens, etc.

Would be easy way.

I bought two stuffed chickens from Hebert's. I made and have frozen four containers of chicken and sausage gumbo, quart bags of smothered okra, corn maque choux, and white beans with tasso and sausage. I will be picking up frozen boudin this weekend and making and freezing crawfish etouffee. Hoping to ship next week. I can't do everything, it's not like shipping frozen food is free!

One regret is that I froze the gumbo in plastic containers, forgetting that I wanted to freeze it in zip lock bags so they could lie flat. Considering making more gumbo this weekend to freeze in zip locks and just keeping the other gumbo for our freezer.
