Buying Sashimi grade fish

I want to try to make some sushi and poke at home. Looking to find some fish for that. I know very little about buying sashimi fish, and what I’ve seen online so far hasn’t been very clear. What should I look for when buying? What should I expect to pay? Where might I find it (BR)?

You'd probably do a lot better $$$ wise just going to a sushi restaurant and ordering what you want. The price of tuna and salmon for instance can be $15+ a lb. and that is just 2 varieties of fish to use.

But if you insist, I've gotten some very nice tuna and salmon from Costco here in N.O. They offer farm raised salmon a few dollars cheaper than wild caught, but I prefer wild caught.

Would Rouses be a good bet for this? We have one going by our house and I wouldn't mind trying that out as well.

Sushi grade is a term made up by retailers and not some official, regulated term. But fish flash frozen to -31F is the preferred method to kill parasites for raw consumption. However, Tuna does not have to be frozen to this temp as it doesn't have the parasites other fish have. So stick with tuna and you're good. If you want salmon, most farm raised salmon does not have parasites either.

I have seen "sushi grade" fish at whole foods for some ridiculous price so haven't ever bought it. But I eat raw tuna from the regular tuna selection all the time.

I can't help you with a local place to buy it, but once you've seen fresh fish you'll know the difference. Tuna is fairly easy to tell.

"But if your store displays steaks already cut, look for moist (but not wet or weepy), shiny, almost translucent meat. This means the steak is fresh and recently cut. Cut steaks will begin to oxidize and turn brown fairly quickly. If they look dull" and matte, or very brown, then they’re probably old. Another sign of age is “gapping,” when the meat of the muscle starts to separate into flakes. If you’re in doubt about freshness, ask for a smell; the fish should have a fresh sea-air smell, not an overly fishy odor.

I know the Rouses by me has tuna and salmon, also several other fish on hand like catfish, speckled trout, red fish, once in a while red snapper.

The one near me also has a very nice sushi bar that they make fresh as the day goes by. I've gotten it there several times for the wife to take to work the next day for her lunch. Hasn't killed her yet, or even gotten her sick, so it's all good.

Umami is the best sushi joint in BR. I can’t say this enough.

What that chef does with the tuna small plates and rolls is incredible. I’ve never tasted a better tuna dish in my life. He has two small plate tuna dishes I always order.

We went Saturday and he had a bone marrow dish that was phenomenal.

If u haven’t tried it, I highly recommend.
