I usually do two or three hours at 225 then open the vents to 275ish. Finishes around 1.5 hours per pound.

fyi I got the same results yesterday taking mine off at 200 degrees

I did a 8lb one on my new Rec Tec 700 yesterday. I usually do on my WSM. Really loved how it came out. Put on at 630 at 225. Started spritzing after two hours. It was done around 4. I did wrap at 165 and bumped temp up to 275. When hit 200 pulled and put in cooler for couple hours. Came out perfect.

I once read that BBQ is done when it’s done, and over the years I have come to completely understand that this is absolutely true. Too many variables to know how long a cook will take. I did a 13 lb brisket at 250 degrees last weekend and it hit 203 degrees in 11 hours....and I didn’t even wrap it. That makes absolutely no sense! I expected it to take at least 15 hours. You just never know.
