Primal steakhouse has it as an app for $19. Also Golden Steer has bone marrow.

I had a bone marrow appetizer at J Prime in San Antonio for my wife's birthday last month.
It was $30, but it was incredible.
I thought I would try to replicate it at home.
I failed. Miserably.

I'm guessing every single major casino in Vegas will have at least one restaurant, and likely multiple, with bone marrow dish on the menu.
As for a specific, I had a very good bone marrow dish at Cleaver steakhouse which is just off strip behind the Venetian/Wynn.
