Brisket and Pork Steaks for free

Grabbed 12 racks of ribs from Creekstone while they were doing their 10% off deal last week. Package gets delivered, well I got someone else's order. A brisket and two Duroc pork butts, all defrosted but only 55 degrees on the surface. I knew what the next day (yesterday) would hold.

Wanted to run the new smoker a little more before trying a brisket, but when it's free who cares. 10-12 lb brisket is what was ordered, I'm guessing it was a little bigger than that going by cook times and I didn't think to weight it. Pulled pork with one butt and sliced into pork steaks with the other. My favorite was probably the pork steaks, get a bite with that fat and it melted in your mouth.

I did at least call Creekstone and let them know what happened

On a plus side for customer service, they are also sending my ribs again. Should have them Friday.

I did not. But I forgot to add to the rib thread the other day that I didn't pull the membranes, only scored them. I wanted to see how many people would downvote lol.

Everything was great, pork steaks were great. That is something I will do again and try to improve my slicing skills in regards to their equal thickness. Brisket was really good, I'm just not a huge brisket guy.
