I would say it’s kind of like turkey salad on steroids.
Don’t know which is my favorite the turkey cheese or the hogshead cheese or the beef jerky or the boudin or the fresh sausage or . . . well you know what I mean.
And they’ll cut any kind of steaks you want however thick or thin you want them.
Old school butcher shop with a modern flare. Simply the best.
Been going there since 1968.

Garlic sausage is the best. They use to process our deer and we would have everything except back strap made into garlic sausage at 50/50. Stuff was legit. Love the jerky, but not at $20 a pound. Everything there is priced on the cheap side.

Don's Specialty Meats in Carencro makes a different style of beef jerky with a bit more meat and fat on each piece. IMO it's just as good as the Bourgeois beef jerky.

A usual order from the fine folks at Bourgeois consists of Turkey cheese, jerky and green onion sausage.

Currently eating may way through a bag of Bourgeois jerky and beef sticks because of this thread. Pretty damn good! Great flavor, heavy smoke

There was another thread about Bourgeois’s beef jerky a few years back. I ordered some after reading it. Don’t know if I got a bad batch or if it’s just not as good as what’s sold at their store but I wasn’t impressed. Made need to give it another try.

i personally like jerky on the tougher side like bucees... I am thinking based off the pics this jerky is going to have a softer consistency almost like a slim jim.

Is it slim jim soft?

The jerky is cut in strips, probably 1/2”x1/2” strip that are around 6-10” long. They are pretty meaty and not a dry, thinly sliced type of jerky. The smoking process almost puts a crunchy exterior to it. The sticks have the same sort of exterior and are more like the slim jim except without the grease inside the casing. Overall, I like the flavor. Not completely sold in the exterior texture.

I think I will feel the same. I grew up on my moms and grandmas beef jerky and it was for of tougher texture and I prefer jerky that way.

I agree that their beef jerky and turkey cheese are legit, but be careful for those with MSG sensitivities. Pretty sure the jerky has a fair amount of mono sodium glutamate as listed under ingredients.

Not the same. It needs to be said there is two bourgeois meats in Thibodaux. Donald and his brother split a long time ago. The one on tiger drive is not the same. Burgers and jerky are different. The original puts no preservatives in their meat. That’s why when you buy it. If you don’t plan on eating it store it in the fridge. One of my best podnuhs works over there.

The jerky at rouses is from the tiger drive one. As well as that place on 90.
