Right after I moved to the Atlanta area, I visited a local Ruth's Chris and ordered a filet, black and blue. When my steak arrived it was cooked well-done and topped with bleu cheese. Was not appetizing at all. I sent the steak back and left the restaurant. Ever since I could not imagine bleu cheese on a steak being appetizing.

There's not a chance they didn't ask how you wanted your steak cooked so what were you expecting? It's like ordering a blue cheese burger and sending it back because it has blue cheese

First had this in Central California (San Luis Obispo). Friends butterflied a thick tri-tip, put bleu cheese in the middle and put on the grill. Delicious.

"black and blue" which means charred and crisp on the outside and rare on the inside.
Similar to Pittsburgh rare.

That was my reaction. I'm not paying premium prices for a steak that is burned and smothered in cheese.

Interesting, I grew up as a spoiled kid and never once heard that saying. I guess I can see how the message got misconstrued but you would think they would ask the right questions to avoid that

The blue cheese butter filets were perfect! Got them cooked to a perfect mid rare, doused the steak with heaping spoonfuls of blue cheese butter, coated both sides and closed the lid. The temperature on the egg immediately pegged out over 700 degrees. I let it eat for 30 seconds then removed. All that was left was some juicy melted blue cheese crumbles and a perfectly charred mid-rare plus piece if meat!
