somehow gotta be related to my late hunting friend Harry Zaunbrecher (died in 2014). His mother was Barabara Frey. Harry's family grew up farming rice in Gueydan. I believe 3 of the brothers (Harry, Edmond, and Vincent) moved to Bonita, LA / Jones, LA. around 1960. People thought they were crazy clearing land along the Boeuf River to farm rice. They were true pioneers and introduced rice farming to NE LA. Harry's wife is Ms. Lucy who had a cooking show on PBS documenting the Classic Cajun Culture.

Ms. Lucy with pics from 25 yrs ago during her PBS cooking show days. She's originally from Gueydan before moving to Jones, LA, and in her late 80's now. Not sure of her current health condition. The Zaunbrecher brothers were always good to me and I miss cooking with them at the deer camp

They call it Ponce? Or Chaudin?
I know different places use different names.

Ponce is smoked and Chaudin is green (not smoked).
