This. Start testing after 5 minutes until they have the texture you want. I add about a cup of white vinegar to my water. Ghee is what I dip mine in.

5 places in BSL have steamed/boiled royal reds on the menu and the wide range in quality of the catch is the issue for me. I like boiled shrimp cold and no one serves reds that way. Most of the time they seem over cooked and mealy.

I had them for the first time at the Harbor Seafood place in Kenner about 6 months ago and they were amazing. Cooked perfect and served in a butter/garlic dish.
Fast forward a month later and I tried them at one of the tourist BS places in Orange Beach and they were dry, tough, and not seasoned well at all.
I don't care about price if something is good. It's not like I'm ordering more than a pound or two.

I fry dem bitches. Not a fan of steamed seafood and boiled shrimp have never been high on my list. I fry mine in half Panko/half Italian bread crumbs and love them that way.
